This is a good way for me to track and remember what I've done lately and in the past. A form of journaling. I have several reasons I blog, when I travel, when I spend time outdoors, when I enjoy any kind of experience and also when I eat/try new food.. Here are all of those posts. I usually post every month on average.


Jensens Do: Cancun
Spring break 2026 was a full family trip to Cancun Mexico. Everyone was there for different times but we all overlapped for about 5 days. Coleson and Katie got there on the first day followed the next day by Allie, Emelia and me and Caleb, Gabie and Hazel. Mom, Dad and Landry as well as Charlee and Bridger got there on day 3. Alamo City - San Antonio
Took a business trip over to Texas. Most of my time was spend working but I had some time to poke around a bit, check out the Alamo and Riverwalk and got to eat at a few cool places for dinners. The City itself is not going to make my top 10 Cities in the US list, in fact it'll be quite a ways down on the all time list, so much so that I don't think I'll ever be visiting again. There were some cool parts like the Riverwalk itself and the Alamo but overall was kindof a mess.

Money Can't Buy Happiness, But it Can Get You to Santorini
Probably the most anticipated stop of the trip was Santorini and it did not disappoint at all starting on the water below the cliffs the view from the bottom was a great way to start. Athens City Center + Plaka + Anafiotika + Roman Agora
This was the first where we spent the first day of our big trip to Greece. We got into Athens and immediately hit the streets after checking into our hotel. Death Valley Rally
For our 5th anniversary we did a weekend trip through Las Vegas to Death Valley. Las Vegas was a blast, we were only there long enough for a nice dinner and a bit of time to chill. We went to a new place called Din Tai Fung and it was really good. The dumplings were steamed in bamboo bins and were fresh and delicious. Los Angeles: Food, great. The rest, not so much.
Though our trip to LA was brief, we got to experience the food scene pretty well. We went to a couple street food markets, ate at some fancier places and had a great time trying different styles of food. Island Eats: Mauis Best Places to Eat
Of course there is a whole post written only about the food we ate on Maui. As I would consider myself a foodie, eating experiences while traveling is a large part of why we go on trips. Kansas City Part II
Went back to KC for the weekend. Took the family this time. Spent most of our time eating BBQ: Jack Stack and Joes were the favorites, with Q39 as a close runner up, from burnt ends and rocketpig sammies to BBQ poutine. Went to the game of course and watched the Chiefs spank the Rams. Good game with good fans and teams. Got to also see some church sites and war museums and that was also really cool to see.

Jackson Hole
Spent the day around Jackson Hole, tried some bison burgers and tasty sweets. Then we got the chance to go white water rafting. It was such a blast and we got soaked, swam a bit in the river and went through some pretty big and long rapids.

Calgary Alberta
On our way up to Vanderhoof we decided to stay a few days in Calgary to split up the trip a bit, we had an awesome hotel right downtown, went to a swanky dinner spot were able to see the temple there and got some pastries. Was a great way to see one of the places we drive through and not just from the gas station as we sped through. Go Flames!

Mt. Pope Provincial Park
Took a day to do a not so quick and not so easy 8 mile hike up Mt. Pope, got a good workout and got to enjoy some beautiful views. Didn't take long to eat all the calories back at lil Jimmy's.

How 'Bout those Chiefs!
Got to check a major item off the bucket-list, got to see the KC Chiefs play in arrowhead, the 3o point win wasn't bad either. It would also be a crime not to mention the BBQ that definitely lived up to all the hype. Can't forget the low quality video
